Ingredients

1 package (16 oz) phyllo dough, thawed

1 cup unsalted butter, melted

2 cups walnuts, finely chopped (or a mix of walnuts and pistachios)

1 cup sugar

1 teaspoon ground cinnamon

1 cup honey

1 cup water

1 teaspoon vanilla extract

1 tablespoon lemon juice

Instructions

Prep the Nuts: In a mixing bowl, combine the chopped walnuts (or nut mixture), sugar, and cinnamon. Set aside.

Prepare the Phyllo: Preheat your oven to 350°F (175°C). Unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out.

Layer the Phyllo: Brush a 9x13 inch baking dish with melted butter. Lay down 5 sheets of phyllo dough, brushing each sheet with melted butter before adding the next.

Add Nut Mixture: After laying down the first five sheets, sprinkle about 1/4 of the nut mixture over the phyllo. Repeat the layering process (5 sheets of buttered phyllo followed by the nut mixture) until you use all the nut filling (approximately 3-4 layers of filling).

Finish with Phyllo: Once the nut mixture is all layered in, finish with another 5 sheets of phyllo, brushing each with butter.

Cut the Baklava: Using a sharp knife, carefully cut a diamond or square pattern into the unbaked baklava. This will make it easier to serve after baking.

Bake: Bake the baklava in the preheated oven for 45-50 minutes, or until golden brown and crisp.

Prepare the Syrup: While the baklava is baking, combine honey, water, vanilla extract, and lemon juice in a saucepan. Bring to a boil and then reduce the heat to simmer for about 10 minutes. Remove from heat and let it cool.

Pour Syrup Over Baklava: Once the baklava is done baking, immediately pour the syrup evenly over it. Let it soak in and cool at room temperature for at least 2 hours, or overnight, to allow the flavors to meld.

Serve: Once cooled, serve the baklava pieces with a sprinkle of crushed nuts if desired. Enjoy the sweet layers of richness!
