6 cups fresh peaches, peeled and sliced

1 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1 tablespoon cornstarch

1 tablespoon unsalted butter, cut into small pieces

1 1/2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Peaches: In a large mixing bowl, combine the sliced peaches, sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Gently toss to combine, then set aside to marinate for about 15-20 minutes.

      Make the Batter: In another bowl, whisk together the flour, baking powder, and salt. In a separate bowl, mix the milk, melted butter, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring just until combined (be careful not to overmix).

        Assemble the Cobbler: Pour the batter into a greased 9x13-inch baking dish. Spoon the peach mixture over the batter, spreading it evenly. Dot the top with small pieces of butter.

          Bake: Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
