Ingredients

1 pound beef tenderloin, trimmed

Salt and pepper, to taste

2 tablespoons olive oil

12 slices of baguette (about ½ inch thick)

4 tablespoons unsalted butter

2 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 tablespoon fresh thyme leaves

1 tablespoon balsamic reduction (for drizzling)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Beef: Season the beef tenderloin generously with salt and pepper. In a skillet over medium-high heat, add the olive oil. Once hot, sear the beef for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from skillet and let it rest for 10-15 minutes.

Make the Crostini: Preheat your oven to 400°F (200°C). Place the baguette slices on a baking sheet, drizzle with olive oil, and sprinkle with salt. Toast in the oven for about 5-7 minutes until golden brown and crisp. Remove from the oven and set aside.

Create the Creamy Parmesan Sauce: In the same skillet used for the beef, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Pour in the heavy cream, stirring continuously. Gradually add the grated Parmesan cheese, whisking until smooth. Stir in the fresh thyme and season with salt and pepper to taste. Remove from heat.

Assemble the Crostini: Slice the rested beef tenderloin into thin strips. On each toasted baguette slice, layer a piece of beef and drizzle with the creamy Parmesan sauce.

Garnish and Serve: Finish with a drizzle of balsamic reduction and sprinkle with fresh parsley. Serve immediately while the crostini are warm.
