1 cup dark brown sugar, packed

1 large egg

1/4 cup molasses

1 teaspoon vanilla extract

1/2 cup granulated sugar (for rolling)

For the Eggnog Frosting:

1/2 cup unsalted butter, softened

4 cups powdered sugar

1/4 cup eggnog (store-bought or homemade)

1 teaspoon vanilla extract

1/2 teaspoon ground nutmeg (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

    Prepare Dry Ingredients: In a medium bowl, whisk together flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt. Set aside.

      Cream Butter and Sugar: In a large bowl, beat the softened butter and dark brown sugar with an electric mixer on medium speed until creamy and well-blended (about 2-3 minutes).

        Add Wet Ingredients: Add the egg, molasses, and vanilla extract to the butter mixture. Beat on low speed until fully incorporated.

          Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, beating on low speed until just combined. Do not overmix.

            Shape the Cookies: Roll tablespoon-sized balls of dough in granulated sugar and place them onto the prepared baking sheets, spacing them about 2 inches apart.

              Bake: Bake in the preheated oven for about 8-10 minutes or until the cookies are set but still soft in the center. Allow them to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
