4 medium russet potatoes, peeled and grated

1 small onion, grated

2 large eggs

1/4 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon smoked paprika (optional)

Vegetable oil, for frying

Applesauce or sour cream, for serving (optional)

Instructions
 

Prepare the Potatoes: Place the grated potatoes in a clean kitchen towel and twist to squeeze out excess moisture. This step is crucial for achieving crispy pancakes.

    Mix Ingredients: In a large mixing bowl, combine the drained grated potatoes and onion. Add the eggs, flour, baking powder, salt, black pepper, and smoked paprika (if using). Mix well until all ingredients are evenly incorporated.

      Heat the Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat. You want enough oil to crisp the pancakes but not so much that they are deep-fried.

        Fry the Pancakes: Once the oil is hot, scoop about 1/4 cup of the potato mixture and place it in the skillet, gently flattening it with the back of the spatula. Repeat, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

          Drain and Keep Warm: Remove the pancakes from the skillet and place them on a paper towel-lined plate to drain any excess oil. You can keep them warm in a preheated oven at 200°F (93°C) while you fry the remaining pancakes.
