Garlic Butter Steak Bites and Potatoes

1 lb sirloin steak, cut into bite-sized cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

2 tablespoons olive oil

Optional: chopped parsley for garnish

Prepare Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper until evenly coated. Spread them in a single layer on a baking sheet.

    Roast Potatoes: Roast the potatoes in the preheated oven for 20-25 minutes or until golden and crispy, flipping halfway through.

      Sear Steak Bites: While the potatoes are roasting, heat a large skillet over medium-high heat. Add 2 tablespoons of butter. Once melted and hot, add the cubed sirloin steak in a single layer. Sear for 2-3 minutes on each side, depending on your preferred doneness.

        Add Garlic & Herbs: In the last minute of cooking the steak bites, push them to one side of the skillet, add the remaining 2 tablespoons of butter, minced garlic, rosemary, and thyme. Stir-fry together for another minute, coating the steak bites in the flavorful garlic butter.

          Combine and Serve: Once the potatoes are done, take them out of the oven and mix them with the garlic butter steak bites in the skillet. If desired, garnish with chopped parsley.

            Enjoy: Serve the garlic butter steak bites and crispy potatoes hot, drizzled with any remaining garlic butter from the skillet.
