Ingredients
  

1 lb ribeye steak (or your preferred cut), cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/3 teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or 1/3 teaspoon dried rosemary)

Salt and pepper, to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes: In a large skillet, add the halved baby potatoes and cover them with water. Season with salt and bring to a boil. Cook for about 10-15 minutes, or until fork-tender. Drain and set aside.

    Sear the Steak: In the same skillet, heat the olive oil over medium-high heat. Once hot, add the steak pieces. Season with salt and pepper and sear for about 2-3 minutes on each side until they reach your desired doneness. Remove the steak from the skillet and set aside.

      Cook the Potatoes: In the same skillet, add the butter and melt over medium heat. Add the cooked potatoes and sauté for about 5-7 minutes, or until they start to brown.

        Add Aromatics: Once the potatoes are golden, add the minced garlic, thyme, and rosemary to the skillet. Stir well and cook for an additional minute until fragrant.

          Combine Everything: Return the steak pieces to the skillet and toss everything together gently. Cook for another 2-3 minutes to heat through and allow flavors to meld.
