1 pound large shrimp, peeled and deveined

8 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust according to spice preference)

1 cup dry white wine (such as Sauvignon Blanc)

1 lemon, juiced and zested

Salt and pepper, to taste

1/2 cup fresh parsley, chopped

8 ounces linguine or spaghetti

Grated Parmesan cheese (optional, for serving)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the linguine or spaghetti according to package instructions until al dente. Drain, reserving about 1 cup of pasta water, and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, melt 4 tablespoons of butter. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant. Then, add the shrimp and season with salt and pepper. Cook until the shrimp turn pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, pour in the white wine and bring it to a simmer, scraping the bottom of the skillet to deglaze. Let the wine reduce by half, about 3-5 minutes. Stir in the lemon juice and zest, and then add the remaining 4 tablespoons of butter, stirring until melted.

        Combine Everything: Return the shrimp to the skillet, and add the cooked pasta. Toss everything together, adding some reserved pasta water as needed for moisture. Stir in the chopped parsley and adjust seasoning with salt and pepper.
