Ingredients

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup fresh strawberries, diced

8 slices of bread (white or brioche work well)

1 cup crushed graham crackers

1 egg

1/2 cup milk

1 teaspoon cinnamon

Vegetable oil, for frying

Whipped cream, for serving (optional)

Additional strawberries, for garnish (optional)

Instructions

Prepare the Cheesecake Filling: In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. Gently fold in the diced strawberries until evenly distributed.

Assemble the Sandwiches: Spread a generous amount of the cheesecake filling onto four slices of bread. Top with the remaining slices to create sandwiches. Press down lightly to secure them.

Prepare the Coating: In a shallow dish, whisk together the egg and milk until well combined. In another shallow dish, mix the crushed graham crackers and cinnamon.

Coat the Sandwiches: Dip each sandwich first in the egg mixture, ensuring both sides are coated, then dredge in the graham cracker mixture, pressing gently to adhere the crumbs.

Heat the Oil: In a large skillet, heat about 1/2 inch of vegetable oil over medium heat. You can check if the oil is ready by dropping a small piece of bread in; it should sizzle immediately.

Fry the Sandwiches: Carefully place the coated sandwiches in the hot oil, frying a few at a time to avoid overcrowding. Cook for about 2-3 minutes per side or until golden brown and crispy.

Drain and Serve: Once fried, remove the sandwiches from the skillet and place them on a paper towel-lined plate to drain excess oil. Allow them to cool for a minute.

Serve: Slice the sandwiches in half, serve warm, topped with whipped cream and additional strawberries if desired.
