Ingredients

1 jar (16 oz) dill pickle slices

1 cup all-purpose flour

1 cup cornmeal

1/2 teaspoon cayenne pepper (optional for heat)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

2 eggs

1/4 cup buttermilk (or milk)

Vegetable oil (for frying)

Ranch dressing (for dipping)

Instructions

Prepare the Pickles: Drain the pickle slices and pat them dry with paper towels to remove excess moisture. This prevents sogginess when frying.

Set Up the Breading Station: In one bowl, combine flour, cayenne pepper, garlic powder, onion powder, paprika, salt, and black pepper. In a second bowl, whisk together eggs and buttermilk until well blended. In a third bowl, place the cornmeal.

Coat the Pickles: Dip each pickle slice into the flour mixture, making sure it’s well-coated. Shake off any excess flour, then dip it into the egg mixture, allowing any excess to drip off. Finally, coat the pickle in cornmeal, pressing gently to adhere. Place the breaded pickles on a wire rack or plate.

Heat the Oil: In a deep skillet or saucepan, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping in a small piece of bread; it should sizzle and turn golden brown when it’s hot enough.

Fry the Pickles: Carefully add a few breaded pickle slices to the hot oil, avoiding overcrowding the pan to ensure they fry evenly. Fry for about 2-3 minutes on each side until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Serve: Serve the fried pickles warm with a side of ranch dressing for dipping. Enjoy the crispy, tangy, and savory flavors!
