3 cups cooked, shredded chicken

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

1 cup frozen mixed vegetables (peas, carrots, corn)

1 cup long-grain white rice, uncooked

2 cups chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and black pepper to taste

1 cup shredded cheddar cheese

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the shredded chicken, cream of mushroom soup, sour cream, frozen mixed vegetables, uncooked rice, chicken broth, garlic powder, onion powder, paprika, salt, and black pepper. Mix until well incorporated.

      Transfer the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

        Cover the dish tightly with aluminum foil to retain moisture during cooking.

          Bake in the preheated oven for 45 minutes.

            After 45 minutes, remove the foil and carefully stir the casserole. Sprinkle the shredded cheddar cheese on top.

              Return to the oven uncovered and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly, and the rice is fully cooked.

                Once done, remove from the oven and let it sit for 5 minutes before serving.
