Japanese pancakes, known for their extraordinary fluffiness and pillowy texture, have taken the culinary world by storm. Fluffy Japanese Pancakes:

Ingredients
  

4 large eggs, separated

2 tablespoons granulated sugar

1 teaspoon vanilla extract

1/2 cup milk

3/4 cup all-purpose flour

1 teaspoon baking powder

A pinch of salt

Butter or oil for cooking

Powdered sugar and maple syrup for serving

Instructions
 

In a large mixing bowl, whisk the egg whites until stiff peaks form. Gradually add 1 tablespoon of sugar while whisking to create a glossy meringue. Set aside.

    In another bowl, beat the egg yolks, remaining sugar, and vanilla extract until pale and creamy. Then, add the milk and mix until combined.

      Sift in the flour, baking powder, and salt. Mix gently until just combined; be careful not to overmix.

        Gently fold in the meringue in three additions. Start with a small amount to lighten the mixture, then gradually incorporate the rest, being careful to maintain the airy texture.

          Preheat a non-stick skillet or griddle over low heat and lightly grease with butter or oil.

            Using a round mold (like a cookie cutter) for shape, pour in a ladleful of batter, filling it halfway. Cover with a lid and cook for 4-5 minutes until the bottom is golden brown.

              Carefully flip the pancake, adding a few drops of water to the skillet and re-cover to create steam. Cook for another 4-5 minutes until puffed and cooked through.

                Remove the pancakes from the mold and serve immediately, dusted with powdered sugar and drizzled with maple syrup.
