1 cup orzo pasta

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 cup Kalamata olives, pitted and sliced

1/2 cup crumbled feta cheese

1/4 red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/4 cup extra-virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon lemon juice

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Cook the Orzo: In a large pot, bring salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Stir occasionally to prevent sticking.

    Prepare the Dressing: While the orzo is cooking, in a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper until well combined. Set aside.

      Chop the Vegetables: Dice the cucumber, halve the cherry tomatoes, slice the olives, and finely chop the red onion, parsley, and mint.

        Combine Ingredients: Once the orzo is cooked, drain it and rinse under cold water to cool it down quickly. In a large mixing bowl, add the cooked orzo, cherry tomatoes, cucumber, olives, red onion, feta cheese, parsley, and mint.

          Dress the Salad: Pour the dressing over the pasta salad and toss gently to combine all ingredients well. Adjust the seasoning with additional salt and pepper to taste.

            Chill: Cover the salad and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

              Serve: Serve chilled or at room temperature as a refreshing side dish or light main course. Enjoy!
