8 lamb chops, about 1-inch thick

4 cloves garlic, minced

2 tablespoons fresh oregano, chopped (or 1 tablespoon dried oregano)

2 tablespoons fresh rosemary, chopped

1 teaspoon ground cumin

1 teaspoon paprika

Salt and black pepper, to taste

1/4 cup olive oil

Juice of 1 lemon

Zest of 1 lemon

1 cup Greek yogurt

1 tablespoon honey

Fresh mint leaves, for garnish

Instructions
 

Marinate the Lamb: In a large bowl, mix the minced garlic, oregano, rosemary, cumin, paprika, salt, black pepper, olive oil, lemon juice, and lemon zest. Add the lamb chops to the bowl and massage the marinade into the meat. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

    Prepare the Yogurt Sauce: In a separate bowl, combine the Greek yogurt, honey, salt, and a squeeze of lemon juice. Mix well until smooth. Adjust seasoning to taste and refrigerate until serving.

      Preheat the Grill: Preheat your grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.

        Grill the Lamb Chops: Remove the lamb chops from the marinade, shaking off any excess. Place the chops on the grill and cook for 4-5 minutes on each side for medium-rare, or longer if you prefer them well done. Use a meat thermometer to check for doneness; a temperature of 145°F (63°C) is medium-rare.

          Rest the Chops: Once cooked, remove the lamb chops from the grill and let them rest for 5 minutes. This allows the juices to redistribute, making the lamb more tender.
