4 large bell peppers (any color)

1 cup cooked quinoa (or rice)

1 cup black beans (drained and rinsed)

1 cup corn (frozen or canned)

1 cup salsa (your favorite kind)

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro (for garnish)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Bell Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.

      Mix Filling: In a large mixing bowl, combine the cooked quinoa, black beans, corn, salsa, cumin, smoked paprika, garlic powder, half of the shredded cheese, and season with salt and pepper. Stir well until fully mixed.

        Stuff the Peppers: Generously spoon the filling mixture into each bell pepper, packing it down gently. Sprinkle the remaining cheese on top of the stuffed peppers.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the peppers are tender.

            Garnish and Serve: Remove from the oven and let stand for a few minutes. Garnish with fresh cilantro before serving.
