2 medium-sized russet potatoes

1 cup all-purpose flour (plus extra for dusting)

1 large egg

1 teaspoon salt

½ teaspoon garlic powder (optional)

½ teaspoon black pepper

Water (as needed for dough consistency)

2 tablespoons olive oil (for sautéing)

Fresh herbs (like parsley or basil) for garnish

Grated Parmesan cheese (optional, for serving)

Instructions
 

Prepare the Potatoes: Peel the russet potatoes and cut them into quarters. Boil them in salted water until fork-tender, about 15-20 minutes.

    Make the Dough: Drain the potatoes and mash them in a large bowl until smooth. Allow them to cool slightly. Once cooled, add in the egg, salt, garlic powder (if using), black pepper, and half of the flour. Mix until combined. Gradually add the remaining flour, working it into a dough. You may need a little water to achieve a smooth and slightly sticky dough.

      Shape the Noodles: On a floured surface, divide the dough into four portions. Roll each portion into a long rope about ½ inch thick. Use a knife or pizza cutter to slice the ropes into bite-sized noodle pieces.

        Cook the Noodles: Bring a large pot of salted water to a boil. Carefully drop the potato noodles into the boiling water. Cook for about 3-5 minutes or until they float to the surface and are tender. Remove and drain.

          Sauté the Noodles: In a large skillet, heat the olive oil over medium heat. Add the cooked potato noodles and sauté for 3-4 minutes until they are slightly golden and crispy on the edges.
