2 large russet potatoes

1 cup all-purpose flour (plus extra for dusting)

1 large egg

1 teaspoon salt

1 tablespoon olive oil

1/2 teaspoon garlic powder (optional)

Fresh herbs for garnish (like parsley or chives)

Grated Parmesan cheese (optional for serving)

Instructions
 

Prepare the Potatoes: Peel the russet potatoes and cut them into chunks. Place the potatoes in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and let cool slightly.

    Mash the Potatoes: In a large bowl, mash the cooked potatoes until smooth. Allow them to cool completely so they won't cook the egg when added.

      Make the Dough: Once cooled, add the egg, flour, salt, olive oil, and garlic powder (if using) to the mashed potatoes. Mix until a dough forms. The dough should be soft but not sticky. If it's too sticky, add a little more flour.

        Roll Out the Dough: Lightly flour a clean surface. Divide the dough into 4 parts for easier handling. Roll one part out into a long rectangle about 1/8 inch thick. Use a pizza cutter or knife to cut the dough into thin strips (about 1/4 inch wide).

          Cook the Noodles: Bring a large pot of salted water to a boil. Add the potato noodles and cook for about 3-4 minutes or until they float to the surface. They are done when tender. Use a slotted spoon to transfer them into a bowl.

            Sauté (Optional): In a skillet over medium heat, add a drizzle of olive oil. Toss the cooked noodles in the skillet and sauté for a couple of minutes to give them a little color.

              Serve: Garnish with fresh herbs and sprinkle with grated Parmesan cheese if desired. Enjoy warm!
