Ingredients
  

12 oz spaghetti

4 cups vegetable broth (or chicken broth)

3 tbsp olive oil

4 cloves garlic, minced

1 medium onion, chopped

1 cup cherry tomatoes, halved

1 tsp dried oregano

1 tsp dried basil

½ tsp red pepper flakes (optional)

1 cup fresh spinach

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Fresh basil leaves (for garnish)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add the cherry tomatoes, oregano, basil, and red pepper flakes. Cook for another 2-3 minutes until the tomatoes start to soften.

        Pour in the vegetable broth, then add the spaghetti, making sure the noodles are submerged in the liquid. Season with salt and pepper to taste.

          Bring the mixture to a boil, then reduce to a simmer. Cover and cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and the liquid has mostly absorbed.

            Stir in the fresh spinach and cook for an additional 1-2 minutes, just until wilted.

              Remove from heat and let it sit for a couple of minutes. Serve hot, topped with grated Parmesan cheese and garnished with fresh basil leaves.
