1 cup rolled oats

1 cup finely grated carrots (about 2 medium carrots)

1/2 cup unsweetened applesauce

1/3 cup honey or maple syrup

1/4 cup milk (or a non-dairy substitute)

1/4 cup vegetable oil or melted coconut oil

2 large eggs

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp nutmeg (optional)

Pinch of salt

1/2 cup raisins (optional)

1/2 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line an 8-inch round cake pan with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, baking soda, cinnamon, nutmeg (if using), and salt. Stir well to combine.

      Combine Wet Ingredients: In another bowl, whisk together the applesauce, honey or maple syrup, milk, vegetable oil (or melted coconut oil), eggs, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Be careful not to overmix.

          Add Carrots and Extras: Gently fold in the grated carrots, raisins, and chopped nuts (if using) until evenly distributed throughout the batter.

            Bake: Pour the batter into the prepared cake pan and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

              Cool: Once baked, allow the cake to cool in the pan for about 10 minutes. Then transfer to a wire rack to cool completely.

                Serve: Slice the cake into small portions suitable for toddlers. You can serve it plain, or for an extra treat, top it with a light cream cheese frosting or yogurt.
