1 ½ cups shredded unsweetened coconut

1 cup sweetened condensed milk

1 ½ cups graham cracker crumbs

½ cup cream cheese, softened

1 teaspoon vanilla extract

½ cup white chocolate chips (optional for coating)

A pinch of salt

Instructions
 

Combine Ingredients: In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, graham cracker crumbs, softened cream cheese, vanilla extract, and salt. Mix well until everything is fully incorporated and holds together.

    Form Balls: Use your hands to scoop out about a tablespoonful of the mixture and roll it into a ball shape. Repeat this process until all the mixture is used up. You should be able to make around 20-25 balls.

      Chill: Place the formed coconut balls on a baking sheet lined with parchment paper. Once all the balls are made, put the baking sheet in the refrigerator and let them chill for at least 30 minutes to firm up.

        Optional Coating: If you decide to coat your coconut balls, melt the white chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring in between until smooth. Dip each chilled coconut ball into the melted chocolate, allowing any excess to drip off, then return to the parchment-lined sheet.

          Final Chill: Return the coated or uncoated coconut balls to the refrigerator for an additional 15-20 minutes to set the chocolate (if coated) and to firm up further.
