1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup cornstarch

2 large eggs, beaten

1 cup panko breadcrumbs

1/2 cup all-purpose flour

Salt and pepper, to taste

Vegetable oil, for frying

1/4 cup honey

1/4 cup soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon rice vinegar

1 tablespoon sesame seeds

2 green onions, finely chopped (for garnish)

Instructions
 

Prepare Chicken: Season the chicken pieces with salt and pepper. Set up a breading station: one bowl with cornstarch, another with beaten eggs, and a third with panko breadcrumbs mixed with flour.

    Coat Chicken: Dredge each piece of chicken in cornstarch, shaking off any excess. Dip into the beaten eggs, then coat thoroughly with the panko breadcrumb mixture. Place the coated chicken on a plate.

      Heat Oil: In a large skillet, heat about 1 inch of vegetable oil over medium-high heat until it shimmers.

        Fry Chicken: Carefully add the breaded chicken pieces in batches, ensuring not to overcrowd the skillet. Fry until golden brown and crispy, about 4-5 minutes per side. Remove and place on paper towels to drain excess oil.

          Make Sauce: In a separate saucepan, combine honey, soy sauce, sesame oil, minced garlic, grated ginger, and rice vinegar. Cook over medium heat, stirring until the honey is melted and the sauce is slightly thickened, about 3-4 minutes.

            Combine: In a large mixing bowl, toss the fried chicken with the honey soy sauce until evenly coated.
