2 lbs (900g) Yukon Gold potatoes

1/2 cup (120ml) heavy cream

4 tablespoons unsalted butter, softened

2 large egg yolks

1/2 cup (50g) grated Parmesan cheese

Salt and pepper to taste

A pinch of nutmeg (optional)

Fresh chives or parsley for garnish (optional)

Instructions
 

Prep the Potatoes: Peel the Yukon Gold potatoes and cut them into even chunks. Rinse under cold water to remove excess starch.

    Cook the Potatoes: Place the potatoes in a large pot, cover with cold water, and add a generous pinch of salt. Bring to a boil over medium-high heat, then reduce the heat and simmer for 15-20 minutes or until the potatoes are fork-tender.

      Drain and Mash: Drain the potatoes well and return them to the pot. Using a potato masher or ricer, mash the potatoes until smooth and creamy, ensuring there are no lumps.

        Add Cream and Butter: Stir in the heavy cream, softened butter, and grated Parmesan cheese until fully incorporated. Season with salt, pepper, and a pinch of nutmeg (if using) to taste.

          Incorporate the Egg Yolks: Add the egg yolks to the potato mixture and mix until fully combined. This will give the duchess potatoes their rich texture and beautiful color.

            Pipe the Potatoes: Preheat your oven to 400°F (200°C). Transfer the potato mixture to a piping bag fitted with a large star nozzle. Pipe the mixture onto a baking sheet lined with parchment paper in decorative swirls or rosettes, leaving a little space between each portion.

              Bake: Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and crispy.

                Garnish and Serve: Remove from the oven and let cool slightly. Garnish with fresh chives or parsley before serving if desired.
