1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ cup granulated sugar

½ cup brown sugar, packed

1 large egg

½ cup unsweetened applesauce

½ cup milk

¼ cup vegetable oil or melted coconut oil

1 tsp vanilla extract

1 cup finely chopped apples (about 1 medium apple)

¼ cup granulated sugar (for topping)

1 tsp ground cinnamon (for topping)

Optional: ½ cup chopped walnuts or pecans for added crunch

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a standard muffin tin or line with paper liners.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, and 1 tsp ground cinnamon. Set aside.

      Combine Sugars and Wet Ingredients: In another bowl, beat together the granulated sugar, brown sugar, and egg until well combined. Add the applesauce, milk, vegetable oil, and vanilla extract. Mix until smooth.

        Combine Mixtures: Gradually fold the dry ingredients into the wet ingredients, stirring until just combined. Be careful not to overmix! Gently fold in the chopped apples (and nuts if using).
