1 lb boneless, skinless chicken breasts (cooked and shredded)

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 packet taco seasoning

4 cups chicken broth

1 small onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 cup shredded cheese (cheddar or Mexican blend, for topping)

1 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Sliced jalapeños (optional, for spice)

Instructions
 

In a large pot over medium heat, add a drizzle of olive oil. Once hot, sauté the diced onion and bell pepper until they are soft, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

    Add the shredded chicken, black beans, corn, diced tomatoes with green chilies, taco seasoning, and chicken broth to the pot. Stir everything together until well combined.

      Bring the mixture to a simmer, then reduce the heat to low. Let it simmer for about 20-25 minutes, allowing the flavors to meld. Taste and adjust seasoning with salt and pepper as needed.

        Once ready to serve, ladle the soup into bowls. Top each bowl with shredded cheese, a dollop of sour cream, and a sprinkle of fresh cilantro. Add sliced jalapeños for an extra kick, if desired.

          Serve hot with tortilla chips or warm tortillas on the side for dipping.
