1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (button or cremini)

1 teaspoon smoked paprika

1 tablespoon Worcestershire sauce

1 cup chicken broth

1 cup sour cream

2 tablespoons all-purpose flour

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Cooked egg noodles or rice (for serving)

Instructions
 

Heat the Oil: In a large skillet, heat olive oil over medium heat. Add the sliced chicken breasts and season with salt and black pepper. Sauté until the chicken is browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the chopped onion and cook for 2-3 minutes until softened. Add the minced garlic and sliced mushrooms, and cook until the mushrooms are browned and tender, approximately 4-5 minutes.

      Create the Sauce: Stir in the smoked paprika and Worcestershire sauce, mixing well. Sprinkle the flour over the mushroom mixture and cook for 1-2 minutes to eliminate the raw flour taste. Gradually add the chicken broth while stirring to prevent lumps from forming. Allow the mixture to simmer and thicken for about 5 minutes.

        Combine Ingredients: Lower the heat and stir in the sour cream until fully combined. Return the cooked chicken to the skillet, and mix until the chicken is coated in the creamy sauce. Adjust the seasoning with additional salt and black pepper to taste.

          Serve: Serve the Chicken Stroganoff over a bed of cooked egg noodles or rice. Garnish with freshly chopped parsley for a pop of color and flavor.
