1 lb (450g) cooked chicken, shredded or diced

1 cup frozen mixed vegetables (peas, carrots, corn, green beans)

1/2 cup onion, chopped

1/2 cup celery, chopped

3 cups chicken broth

1/2 cup heavy cream

1/4 cup all-purpose flour

1 tsp garlic powder

1 tsp dried thyme

1/2 tsp black pepper

Salt to taste

1 tsp olive oil

1 cup biscuit mix

1/2 cup milk

1 tbsp fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Cook the Vegetables: In a large skillet over medium heat, add olive oil. Sauté the chopped onion and celery until they are soft and translucent, about 3-5 minutes.

      Make the Sauce: Sprinkle the flour over the vegetables and stir for 1 minute to create a roux. Gradually whisk in the chicken broth and heavy cream, ensuring there are no lumps. Stir in the garlic powder, thyme, pepper, and salt. Let the mixture simmer for about 5-7 minutes until it thickens.

        Combine Chicken and Vegetables: Add the shredded chicken and frozen mixed vegetables to the sauce. Stir well to combine and then remove from heat.

          Prepare the Biscuit Topping: In a separate bowl, combine the biscuit mix and milk until a soft dough forms.

            Assemble the Pot Pie: Transfer the chicken mixture into a round baking dish. Drop spoonfuls of the biscuit dough evenly over the top, covering the filling.

              Bake the Pie: Bake in the preheated oven for 20-25 minutes, or until the biscuit topping is golden brown and cooked through.
