Dorito Taco Salad

A delightful twist on a classic dish.

Ingredients

1 lb ground beef (or turkey for a lighter option)

1 packet taco seasoning

1 cup water

1 can (15 oz) black beans, drained and rinsed

1 cup corn (canned or frozen)

1 cup cherry tomatoes, halved

1 small red onion, diced

1 cup shredded lettuce (romaine or iceberg)

1 cup shredded cheddar cheese

1 cup Doritos (Nacho Cheese or Cool Ranch)

1 cup sour cream

½ cup salsa

2 tbsp olive oil

Fresh cilantro, chopped (optional for garnish)

Instructions

In a large skillet over medium heat, add the ground beef and cook until browned. Drain excess fat, if necessary.

Stir in the taco seasoning and water. Cook until thickened, about 5-7 minutes. Set aside to cool.

In a large mixing bowl, combine the black beans, corn, cherry tomatoes, and red onion. Toss together.

Add the cooked ground beef to the veggie mixture and combine well.

In a separate small bowl, mix the sour cream and salsa to create a creamy dressing.

When ready to serve, layer the shredded lettuce on a large serving platter or individual bowls.

Add the beef and veggie mixture on top of the lettuce.

Sprinkle shredded cheddar cheese evenly over the top.

Crush the Doritos slightly and sprinkle them generously over the salad for that extra crunch.

Drizzle the sour cream and salsa mixture over the entire salad.

Garnish with fresh cilantro if desired, and serve immediately.
