Ingredients

8 oz rotini pasta

6 large eggs

1/2 cup mayonnaise

2 tsp Dijon mustard

1 tbsp apple cider vinegar

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp smoked paprika

Salt and pepper to taste

1/4 cup diced pickles

1/4 cup finely chopped red onion

1/4 cup chopped celery

Fresh chives for garnish (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Hard Boil the Eggs: In a separate saucepan, place the eggs and cover them with cold water. Bring to a boil, then cover and turn off the heat. Let the eggs sit for 12 minutes. After time is up, submerge them in cold water to cool. Once cool, peel the eggs and chop them into small pieces.

Prepare the Dressing: In a large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.

Combine Ingredients: Add the cooked pasta, chopped eggs, diced pickles, red onion, and celery to the bowl with the dressing. Gently fold everything together until the pasta and other ingredients are evenly coated.

Chill: Cover and refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld together.

Serve: Before serving, give the salad a gentle toss. Garnish with fresh chives if desired. Enjoy your delicious Deviled Egg Pasta Salad!
