4 large russet potatoes, peeled and diced

1 cup heavy cream

1 cup grated sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup unsalted butter, divided

1 large onion, finely chopped

2 cloves garlic, minced

Salt and freshly ground black pepper to taste

1/4 teaspoon cayenne pepper (optional)

Fresh chives, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large pot of boiling salted water, cook the diced potatoes for about 10-12 minutes or until fork-tender. Drain and set aside.

      In a medium saucepan, melt 1/4 cup of butter over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

        Add the cooked potatoes to the saucepan with onions and garlic, gently stirring to combine.

          In a bowl, mix the heavy cream, cheddar cheese, Parmesan cheese, salt, pepper, and cayenne pepper (if using). Pour this mixture over the potato and onion mixture and gently fold to combine, ensuring the potatoes are evenly coated.

            Transfer the mixture to a greased 9x13 inch baking dish. Dot the top with the remaining 1/4 cup of butter cut into small pieces.

              Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.

                Remove from the oven and let it cool for a few minutes. Garnish with freshly chopped chives before serving.
