Ingredients
  

1 cup glutinous rice flour (mochi flour)

1/4 cup sugar

1/2 cup water

1/2 teaspoon vanilla extract (optional)

8 fresh strawberries, hulled

Cornstarch or potato starch (for dusting)

Sweetened red bean paste (optional, for filling)

Instructions
 

In a medium-sized bowl, combine the glutinous rice flour and sugar.

    Gradually add water and vanilla extract (if using), stirring until you achieve a smooth batter.

      Transfer the mixture to a microwave-safe bowl, cover with plastic wrap, leaving a small gap for steam to escape.

        Microwave on high for 1 minute, then stir. Cook for another minute, stir again, and then microwave for an additional 30 seconds. The mixture should appear slightly translucent and sticky.

          Carefully remove from the microwave and let it cool slightly until it’s safe to handle (still warm).

            Dust a clean surface with cornstarch or potato starch. Turn the mochi mixture onto the surface and dust your hands with starch to prevent sticking.

              Divide the mochi into 8 equal pieces. Flatten each piece into a small circle (about 3 inches in diameter).

                Place a hulled strawberry in the center of a mochi circle. If using, add a small amount of sweetened red bean paste on top of the strawberry.

                  Carefully fold the edges of the mochi over the strawberry, pinching to seal. Roll it gently in your hands to ensure it’s secure.

                    Repeat the process for the remaining pieces.

                      Once all the mochi are filled and sealed, dust them lightly with more cornstarch to prevent sticking.

                        Serve immediately or refrigerate for an hour to firm up before enjoying.
