Ingredients

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup milk (whole or buttermilk)

3 large eggs

1 tablespoon baking powder

1 teaspoon vanilla extract

½ teaspoon salt

1 cup heavy whipping cream

2 tablespoons powdered sugar (for whipped cream)

Fresh berries (strawberries, blueberries, raspberries) for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: In a medium bowl, combine the flour, baking powder, and salt. Mix well and set aside.

Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next. Stir in the vanilla extract.

Combine Ingredients: Gradually add the dry mixture to the creamed mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined—do not overmix.

Bake: Divide the batter evenly between the two prepared cake pans. Smooth the tops with a spatula. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cakes: Once baked, let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

Make Whipped Cream: In a large mixing bowl, beat the heavy whipping cream with the powdered sugar until stiff peaks form. Take care not to overbeat.

Assemble the Cake: Once the cakes are completely cool, place one cake layer on a serving plate. Spread a generous layer of whipped cream over the top, then layer with fresh berries. Place the second cake layer on top.

Frost the Cake: Use the remaining whipped cream to frost the top and sides of the cake. Garnish with additional fresh berries for a beautiful presentation.

Serve: Slice and enjoy your Cloud Nine Vanilla Dream Cake with family and friends!
