Ingredients
  

1 lb large prawns, peeled and deveined

1 cup shredded carrots

1 cup bean sprouts

1 cup finely chopped green onions

1 cup finely chopped cabbage

2 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon cornstarch

1 package lumpia wrappers (about 20-25 sheets)

Salt and pepper to taste

Oil, for frying

Instructions
 

Preparation of Filling: In a large mixing bowl, combine the prawns, carrots, bean sprouts, green onions, cabbage, garlic, and ginger. Toss together.

    Add Flavor: Drizzle soy sauce and oyster sauce over the mixture. Sprinkle in cornstarch, then season with salt and pepper. Mix until well combined. Let the mixture rest for about 10-15 minutes.

      Wrapping the Lumpia: Take one lumpia wrapper and lay it flat like a diamond shape. Place 2 tablespoons of the filling near the bottom corner of the wrapper. Fold the bottom corner over the filling, then fold the sides inward and roll tightly. Seal the edge with a little water. Repeat with remaining wrappers and filling.

        Frying: In a large skillet or deep fryer, heat oil over medium-high heat. Fry the lumpia in batches, careful not to overcrowd the pan, until golden brown and crispy, about 5-7 minutes per side.

          Draining: Remove the cooked lumpia and place them on a paper towel-lined plate to drain excess oil.

            Serving: Serve hot with a side of sweet chili sauce or vinegar dipping sauce for an extra kick!
