1 lb Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

4 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 can (14.5 oz) diced tomatoes (with juices)

2 cups fresh spinach or kale

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (adjust for spice level)

Salt and black pepper to taste

Olive oil for sautéing

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Sausage: In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula as it cooks. Once browned, remove the sausage from the pot and set aside, leaving drippings in the pot.

    Sauté the Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the onions are translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Add Broth and Tomatoes: Pour in the chicken broth and add the diced tomatoes (with their juices). Stir well, then bring the mixture to a simmer.

        Return the Sausage: Reintroduce the browned sausage to the pot and mix it into the broth. Add the Italian seasoning, red pepper flakes, salt, and black pepper to taste. Let it simmer gently for about 15-20 minutes, allowing the flavors to meld together.

          Creamy Finish: Reduce the heat to low, and stir in the heavy cream and grated Parmesan cheese. Stir continuously until the cheese is melted and the soup is creamy.

            Add Greens: Add the fresh spinach or kale to the pot and cook for another 5 minutes until the greens are wilted and tender.

              Serve: Taste and adjust seasonings if necessary. Ladle the soup into bowls and garnish with freshly chopped parsley. Serve hot with crusty bread or crackers on the side.
