Ingredients
  

1 tablespoon olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 pound ground Italian sausage (or beef)

4 cups chicken or vegetable broth

1 (15-ounce) can crushed tomatoes

2 cups heavy cream

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

8 lasagna noodles, broken into pieces

1 ½ cups ricotta cheese

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until soft, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add the ground Italian sausage (or beef) to the pot and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain any excess fat if necessary.

      Pour in the chicken or vegetable broth and crushed tomatoes. Stir to combine.

        Add the heavy cream, dried oregano, dried basil, and season with salt and pepper. Bring the mixture to a gentle simmer.

          Once simmering, add the broken lasagna noodles and cook according to package instructions until al dente, usually about 8-10 minutes.

            In a separate bowl, mix the ricotta cheese and Parmesan cheese together. Set aside.

              When the noodles are cooked, lower the heat and stir in the ricotta-Parmesan mixture until well combined and creamy.

                Gradually fold in the shredded mozzarella cheese, allowing it to melt into the soup.

                  Serve in bowls, garnished with fresh parsley and an extra sprinkle of Parmesan if desired.
