8 oz (225g) high-quality dark chocolate (70% cocoa or higher)

3 tbsp unsalted butter, diced

3 large eggs, separated

1/2 cup (100g) granulated sugar

1/2 cup (120ml) heavy cream

1 tsp vanilla extract

A pinch of salt

Whipped cream, for garnish

Dark chocolate shavings or cocoa powder, for garnish

Fresh berries or mint leaves, optional garnish

Instructions
 

Melt the Chocolate: In a heatproof bowl, combine the dark chocolate and diced butter. Place the bowl over a pot of simmering water (double boiler method) and stir until smooth and melted. Remove from heat and let cool slightly.

    Whip the Egg Whites: In a clean mixing bowl, whisk egg whites and a pinch of salt until soft peaks form. Gradually add half of the granulated sugar (1/4 cup), continuing to whisk until stiff peaks form.

      Whip the Cream: In another bowl, whip the heavy cream, remaining sugar (1/4 cup), and vanilla extract until soft peaks form. Be careful not to overwhip!

        Combine Yolks and Chocolate: In a separate bowl, whisk the egg yolks until pale. Gradually mix in the melted chocolate until well combined.

          Fold Ingredients: Gently fold the whipped cream into the chocolate mixture until no streaks remain. Then carefully fold in the beaten egg whites in three additions, ensuring the mixture remains light and airy.

            Spoon into Cups: Divide the chocolate mousse into individual serving cups or ramekins, smoothing the tops with a spatula.

              Chill: Refrigerate the mousse cups for at least 2 hours, or until set. This helps the mousse achieve a light and airy texture.

                Serve: Before serving, garnish with a dollop of whipped cream, chocolate shavings or a dusting of cocoa powder. Add fresh berries or mint leaves for extra flair if desired.
