Crockpot Pierogi Casserole with Kielbasa

Ingredients
  

1 package (16 oz) frozen pierogi (potato and cheese variety recommended)

1 lb kielbasa, sliced

1 large onion, chopped

2 cups sauerkraut, drained and rinsed

2 cups shredded cheddar cheese

1 cup sour cream

1 cup chicken broth

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon black pepper

1 teaspoon salt

Fresh parsley, chopped (for garnish)

Instructions
 

In the bottom of your crockpot, layer half of the frozen pierogi.

    Top with half of the sliced kielbasa, half of the chopped onion, and half of the sauerkraut.

      Sprinkle half of the shredded cheddar cheese over this layer.

        In a separate bowl, whisk together the sour cream, chicken broth, minced garlic, paprika, black pepper, and salt until smooth.

          Pour half of the sour cream mixture over the layered ingredients in the crockpot.

            Repeat the layering process with the remaining pierogi, kielbasa, onion, sauerkraut, and shredded cheddar cheese.

              Pour the rest of the sour cream mixture evenly over the top.

                Cover the crockpot and cook on low for 5-6 hours, or until the pierogi are tender and the cheese is melted.

                  Before serving, garnish with chopped fresh parsley for a pop of color.
