2 lbs boneless, skinless chicken breasts

1 cup frozen peas and carrots mix

1 cup frozen corn

1 cup diced potatoes (fresh or frozen)

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 cup milk

1/2 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon black pepper

1/2 teaspoon salt

1/4 cup all-purpose flour

2 refrigerated pie crusts (or 1 sheet of puff pastry)

Fresh parsley, for garnish (optional)

Instructions
 

Prepare Chicken: Place the chicken breasts at the bottom of the crock pot. Season with salt, pepper, thyme, and rosemary.

    Add Vegetables: Layer the diced potatoes, frozen peas and carrots, frozen corn, onion, and minced garlic over the chicken.

      Make the Sauce: In a mixing bowl, whisk together the chicken broth, milk, heavy cream, and flour until well combined. Pour this mixture over the chicken and vegetables in the crock pot.

        Cook: Cover the crock pot and cook on low for 6-8 hours, or on high for 4-5 hours, until the chicken is cooked through and tender.

          Shred Chicken: About 30 minutes before serving, shred the chicken using two forks and stir it back into the pot.

            Prepare Pie Crust: If using pie crusts, roll them out in a pie dish. If using puff pastry, preheat the oven according to packaging instructions.

              Assemble Pie: Transfer the chicken and vegetable mixture into a pie crust. Cover with the top crust, seal the edges, and cut slits in the top for steam to escape. If using puff pastry, brush the top with egg wash for a golden finish.

                Bake: If you used pie crust, place the dish in a preheated oven at 425°F (220°C) for 15-20 minutes, or until the crust is golden brown. For puff pastry, follow package instructions for baking time.

                  Garnish: Once baked, let it cool for a few minutes, then garnish with fresh parsley, slice, and serve warm.
