2 lbs beef chuck roast, cut into 1-inch cubes

4 cups beef broth

4 medium carrots, sliced

3 medium potatoes, diced

1 medium onion, chopped

2 cloves garlic, minced

1 cup frozen peas

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon cornstarch (optional for thickening)

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper, then sear them in batches until browned on all sides (about 3-4 minutes per batch). Transfer the beef to the crock pot.

    Sauté the Aromatics: In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until fragrant and the onion is translucent.

      Combine Ingredients: Add the sautéed onions and garlic to the crock pot with the beef. Then add the sliced carrots, diced potatoes, frozen peas, tomato paste, Worcestershire sauce, dried thyme, and dried rosemary.

        Add Broth: Pour the beef broth over the mixture in the crock pot, ensuring that all ingredients are submerged. Season with additional salt and pepper if desired.

          Cook: Cover the crock pot and cook on low for 8 hours or on high for 4 hours, until the beef is tender and flavors are well combined.

            Thicken the Stew (Optional): If you prefer a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water until smooth. Stir this mixture into the stew and let it cook for an additional 30 minutes on high.

              Serve: Once finished, taste and adjust seasoning if needed. Ladle the hearty stew into bowls and garnish with fresh parsley before serving.
