2 large yellow onions, sliced into 1/4-inch rings

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (optional)

1 teaspoon salt

1/2 teaspoon black pepper

1 large egg

1 cup buttermilk

1 cup breadcrumbs (panko for extra crunch)

Vegetable oil for frying

Prep the Onions: Peel and slice the onions into 1/4-inch thick rings. Separate the rings and set them aside.

    Make the Batter: In a bowl, whisk together the flour, baking powder, garlic powder, paprika, cayenne pepper, salt, and black pepper.

      Prepare the Wet Mixture: In a separate bowl, whisk together the egg and buttermilk until combined.

        Coat the Rings: Dip each onion ring first into the flour mixture, ensuring it’s coated. Then dip it into the buttermilk mixture, followed by the breadcrumbs, making sure each ring is well-coated.
