Ingredients

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon ground black pepper

1/2 teaspoon salt

1 teaspoon cayenne pepper (adjust to taste)

Vegetable oil (for frying)

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

2 tablespoons sriracha (adjust to taste)

1 teaspoon lime juice

1 teaspoon honey

Instructions

Marinate the Chicken: In a bowl, combine the buttermilk with a pinch of salt. Add the chicken pieces, ensuring they are well coated. Cover and marinate in the refrigerator for at least 1 hour (or overnight for best results).

Prepare the Coating: In a separate bowl, mix the flour, cornstarch, garlic powder, paprika, pepper, salt, and cayenne pepper. This will be your crispy coating.

Heat the Oil: In a deep skillet or frying pan, heat approximately 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Chicken: Remove the chicken from the buttermilk, letting excess liquid drip off. Dredge each piece in the flour mixture, ensuring an even coating. Shake off any excess flour.

Fry the Chicken: Carefully add the coated chicken pieces to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 5-7 minutes or until golden brown and crispy. Use a slotted spoon to transfer the cooked chicken to a paper towel-lined plate to drain excess oil.

Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, and honey until smooth and well combined.

Serve: Toss the crispy chicken in the Bang Bang sauce until well coated. You can also drizzle the sauce over the chicken for presentation. Serve hot, garnished with chopped green onions or sesame seeds if desired.
