1 lb (450g) chicken breast, cut into bite-sized pieces

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon black pepper

1 teaspoon salt

1 cup all-purpose flour

1 cup panko breadcrumbs

Vegetable oil, for frying

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon Sriracha (adjust for heat preference)

1 tablespoon honey

Optional: sliced green onions and sesame seeds for garnish

Marinate the Chicken: In a bowl, combine the buttermilk, garlic powder, paprika, black pepper, and salt. Add the chicken pieces and let marinate in the refrigerator for at least 30 minutes (or up to 4 hours for more flavor).

    Prepare the Breading: Set up a breading station with three shallow dishes: one with all-purpose flour, one with a beaten egg (optional, but helps the breadcrumbs stick), and one with panko breadcrumbs.

      Bread the Chicken: Remove the marinated chicken pieces from the buttermilk (allow excess to drip off), then dip them in the flour, then egg (if using), and finally coat with panko breadcrumbs until well covered.

        Fry the Chicken: In a deep frying pan or large skillet, heat about 1 inch of vegetable oil over medium heat until it shimmers. Carefully add breaded chicken pieces in batches, avoiding overcrowding. Fry for about 5-7 minutes per side or until golden brown and cooked through. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
