Ingredients

2 medium zucchinis

1 cup breadcrumbs (panko recommended)

1/2 cup grated Parmesan cheese

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg

Cooking spray or olive oil

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Slice the Zucchini: Rinse the zucchinis under cold water. Cut off the ends and slice them into thin rounds, about 1/4 inch thick.

Prepare the Coating: In a shallow dish, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.

Egg Wash: In a separate bowl, crack the egg and whisk it until it's well combined.

Coat the Zucchini: Dip each zucchini slice into the egg wash, allowing the excess to drip off before carefully placing it in the breadcrumb mixture. Press down gently to ensure the crumbs adhere well. Place the coated slices on the prepared baking sheet in a single layer.

Spritz with Oil: Lightly spray the zucchini chips with cooking spray or drizzle with olive oil to help them become crispy while baking.

Bake: Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy. It may be necessary to flip them halfway through to ensure even cooking.

Cool and Serve: Once baked, let the zucchini chips cool on the baking sheet for a few minutes before transferring to a serving platter. Enjoy as a snack or a side dish with your favorite dip!
