12 oz rotini pasta

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (10 oz) Rotel diced tomatoes with green chilies, undrained

1 can (10.5 oz) cream of mushroom soup

1 cup heavy cream

1 tsp chili powder

1 tsp cumin

Salt and pepper, to taste

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it up with a spatula. Drain any excess grease, then add the diced onion and minced garlic. Sauté for about 3-4 minutes, until the onion is translucent.

      Combine Ingredients: Stir in the undrained Rotel, cream of mushroom soup, and heavy cream. Mix well. Add chili powder, cumin, salt, and pepper. Allow the mixture to simmer for about 5-7 minutes, stirring occasionally.
