12 oz fettuccine or pasta of choice

1 lb boneless, skinless chicken breast, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

1 cup ricotta cheese

1 cup chicken broth

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish

Optional: red pepper flakes for heat

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Cook Garlic: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.

        Make the Sauce: Lower the heat and add the ricotta cheese, chicken broth, Parmesan cheese, and Italian seasoning to the skillet. Stir until the mixture is smooth and creamy. If the sauce is too thick, add a bit of the reserved pasta water until desired consistency is reached.

          Combine: Add the cooked pasta and chicken back to the skillet. Toss everything together until the pasta is evenly coated in the creamy ricotta sauce. If desired, add more pasta water for extra creaminess.
