Ingredients

2 pounds Russet potatoes, peeled and quartered

1 cup heavy cream

1/2 cup unsalted butter, cubed and at room temperature

1/4 cup sour cream

4 cloves garlic, minced

Salt, to taste

Freshly ground black pepper, to taste

Chives or parsley, for garnish (optional)

Instructions

Boil the Potatoes: Place the peeled and quartered Russet potatoes in a large pot. Cover with cold water, add a generous pinch of salt, and bring to a boil over medium-high heat. Reduce the heat to medium and simmer until the potatoes are fork-tender, about 15-20 minutes.

Prepare the Garlic: While the potatoes are boiling, in a small saucepan, combine the heavy cream, minced garlic, and butter. Heat over low heat until the butter is melted and the mixture is warm, but do not bring it to a boil.

Drain and Mash: Once the potatoes are done, drain them in a colander and return them to the pot. Let them steam for a minute to remove excess moisture. Use a potato masher or ricer to mash the potatoes until smooth.

Combine Ingredients: Slowly pour the warmed cream, garlic, and butter mixture into the mashed potatoes. Add the sour cream and mix until well combined. Adjust the consistency by adding more cream if needed. Season with salt and freshly ground black pepper to taste.

Garnish and Serve: Transfer the creamy mashed potatoes to a serving bowl and garnish with chopped chives or parsley if desired. Serve hot as a perfect side dish.
