4 cups fresh corn kernels (or frozen corn)

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium potatoes, diced

1 carrot, diced

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a lighter version)

2 tablespoons butter

1 teaspoon fresh thyme leaves

Salt and pepper to taste

Optional: Chopped chives or cilantro for garnish

Sauté Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until onion is translucent, about 3-4 minutes.

    Add Vegetables: Stir in the diced potatoes and carrots, cooking for an additional 5 minutes until they slightly soften.

      Simmer: Pour in the vegetable broth and add the corn kernels along with fresh thyme. Bring to a boil, then reduce heat and simmer uncovered for about 15 minutes, until the potatoes are tender.

        Blend Toss: Using an immersion blender, blend about half of the chowder until smooth, leaving some texture for heartiness. If you don't have an immersion blender, carefully transfer half to a blender, blend, and return it to the pot (let it cool slightly before blending).

          Add Cream: Stir in the heavy cream (or coconut milk) and let simmer for an additional 5 minutes. Season with salt and pepper to taste.
