1 medium onion, diced

2 cloves garlic, minced

1 teaspoon Italian seasoning

2 medium carrots, diced

2 celery stalks, diced

4 cups chicken broth

1 pound cooked chicken breast, shredded

1 (16 oz) package potato gnocchi

2 cups baby spinach

1 cup heavy cream

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh parsley, chopped (optional, for garnish)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until translucent. Stir in the minced garlic and Italian seasoning; cook for an additional 1 minute until fragrant.

    Add Vegetables: Toss in the diced carrots and celery. Sauté for about 5-6 minutes until they begin to soften.

      Broth & Chicken: Pour in the chicken broth and bring to a simmer. Stir in the shredded chicken and let the mixture simmer for about 10 minutes.
