8 ounces fettuccine pasta

1 pound large shrimp, peeled and deveined

1 pound smoked sausage, sliced (Andouille or kielbasa works well)

1 tablespoon Cajun seasoning (adjust to taste)

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1 cup fresh spinach

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Prepare the Sausage: In a large skillet over medium heat, add olive oil. Once hot, add the sliced smoked sausage and cook until browned, about 4-5 minutes. Remove the sausage from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and red bell pepper. Cook until soft, about 3 minutes. Add garlic and sauté for an additional 1 minute until fragrant.

        Add Shrimp: Sprinkle Cajun seasoning over the shrimp and add to the skillet. Cook for about 2-3 minutes on each side until they turn pink and are cooked through.

          Make the Sauce: Lower the heat, then pour in the chicken broth and heavy cream. Stir to combine, scraping up any bits from the bottom of the pan. Bring the mixture to a gentle simmer.

            Combine Ingredients: Add the cherry tomatoes and spinach. Cook for another 2-3 minutes until the spinach wilts and the tomatoes soften. Season the sauce with salt and pepper to taste.

              Toss with Pasta: Add the cooked fettuccine and sausage back into the skillet. Toss everything together, adding reserved pasta water if the sauce is too thick. Cook for an additional minute to ensure everything is heated through.

                Serve: Plate the creamy shrimp pasta, then garnish with fresh parsley and grated Parmesan cheese. Enjoy your delicious dish!
