8 oz (225 g) pasta of your choice (penne or fusilli work great)

2 cups broccoli florets (fresh or frozen)

2 tablespoons olive oil

3 cloves garlic, minced

1 cup vegetable broth

1 cup heavy cream (or a non-dairy alternative for a vegan option)

1 cup grated Parmesan cheese (or nutritional yeast for vegan alternative)

1 teaspoon Italian seasoning

Salt and black pepper to taste

Red pepper flakes (optional, for a kick)

Fresh basil or parsley for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Last two minutes of cooking, add the broccoli florets to the pot. Drain and set aside.

    Make the Creamy Sauce: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant (be careful not to burn it).

      Add Liquids: Pour in the vegetable broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer.

        Combine Everything: Add in the cooked pasta and broccoli, Italian seasoning, and grated Parmesan. Stir well to coat the pasta in the creamy sauce. Cook for an additional 3-4 minutes, allowing the sauce to thicken. If it’s too thick, you can add a splash of pasta water to reach your desired consistency.
