Ingredients

8 oz fettuccine or pasta of choice

2 boneless, skinless chicken breasts

4 strips of bacon, chopped

1 cup cream cheese, softened

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1 cup spinach (fresh or frozen)

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

Olive oil (for cooking)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate to drain, leaving the bacon fat in the skillet.

Sear the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. In the same skillet with the bacon fat, add a drizzle of olive oil if needed, and cook the chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing.

Make the Sauce: In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant. Incorporate the softened cream cheese and chicken broth, stirring until smooth. Add the grated Parmesan cheese and cook for another 2 minutes until the cheese melts and combines into a creamy sauce.

Combine Everything: Add the cooked pasta, spinach, and crispy bacon to the skillet with the sauce. Toss gently until everything is well coated. If the sauce is too thick, you can add a little more chicken broth or pasta water to reach your desired consistency.

Serve: Slice the cooked chicken and arrange it on top of the pasta. Garnish with fresh parsley and serve immediately.
